The origin of the name “Buddha Jumping Wall” has three legends in Fuzhou folk:

Formerly known as “Fu Shouquan”, the Buddha Jumping Wall, in the twenty-five years of Guangxu (1899), a official of the Fuzhou Official Money Bureau banqueted the Fujian ambassador Zhou Lian, who was the husband of Bajie Zhoulian, and ordered the guilty to cook the chicken and duck in Shaoxing. More than 20 kinds of raw materials and accessories, such as mutton, pork belly, pigeon eggs and seafood, are made from the name of Fushouquan. After Zhou Lian tasted it, he was full of praise. When asked about the name of the dish, the official said that the dish took the meaning of “good luck and good fortune” and the name was “Fu Shouquan”.
Later, the chef Zheng Chunfa learned to cook this dish and improved it. The taste was better than the first one. When Zheng Chunfa opened the “Juchun Garden” restaurant, it was a sensation in this city. Once, a group of literati came to taste this dish. When Fushou was on the altar, the fragrant incense was overflowing. One of the singers was fascinated by the fascination, triggering the poetry, and immediately screamed: “The altar is fragrant and fragrant, and the Buddha I heard that Zen jumped to the wall.” At the same time, in Fuzhou dialect, the pronunciation of “Fu Shouquan” and “Focus Jumping Wall” is similar. From then on, the meaning of the quoted poem: “Buddha Jumping Wall” became the proper name of this dish, which has a history of more than 100 years.
Fujian customs, the third day after the new daughter-in-law is married, she must personally cook a hand-tea ceremony, serve her in-laws, and gain appreciation. Legend has it that a rich woman, spoiled, does not practice cooking, and suffers from the eve of marriage. Her mother took out all the delicacies from her family and made all kinds of dishes. I wrapped them in lotus leaves and told her how to cook. Who knows that this lady has forgotten the method of firing, and poured all the vegetables into a wine jar, and put the lotus leaf on the stove. On the second day, the fragrance was floating, and the family even praised the dishes. This is the beginning of the “Focus Jumping Wall” of “18 dishes and one pot”.
A group of cockroaches took the pottery pots around the house every day to ask for food, and poured the various leftovers and vegetables left behind to cook, steaming and fragrant. The monk smelled, and the scent was tempted to seduce and jumped out of the wall.
It is said that the sacred monk of the Tang dynasty, on the way to the Shaolin Temple in Fujian, passed by “Fudu” Fuzhou, staying at the hotel at night, just in the wall of the official residence to feast the guests with the “Man Tanxiang”, the sorghum sniffing three feet, Abandoning Buddhism for many years, and jumping into the wall to enjoy the “full of incense.” The name “Buddha Jumping Wall” is named after it.
